Our 100% Extra Virgin Olive Oil is obtained from the important first pressing of the olives. This oil is the richest and most rounded in flavor, with the lowest of acidity. It must not have more than 1 to 1.5% acidity to qualify for the Extra Virgin qualification. Ours is 0.7%.

Our oil is from olives grown on nearby farms and village cooperatives near the pressing facility and taken immediately to the processing facility. The olives are selected for use and pressing based on having the most character, as the olives are unblended and will vary from harvest to harvest. While color is not an indication of quality (ranging from golden to deep green) the rich dark oil does indicate a strength of flavor.

The taste of olive oils varies like olives and the region where the indigenous trees grow is critically important.

Olive production in Portugal is a young business compared to the traditional olive growing regions of Europe, but is being recognized in the same fashion as the growth of wine production in California compared to historic wine regions of the world. There are hundreds of quality Olive Oils offered in the world to entice your palate, and while we have a very simple bottle, we believe the quality of the taste is all that is necessary to know that the Olive Oil is exceptional.
